The Best Gluten Free Vegan Chocolate Chip Cookie Recipe

These are my most favorite healthy cookies. They are a gluten free and vegan chocolate chip cookie. I use them as an after school snack for my kids, an easy addition to a lunch box, or just a sweet treat. They are very easy to make and are gone very quickly! A perfect treat!

For this recipe, you will need the following ingredients: Oats, Almond Butter, Vanilla, Maple syrup, Baking Powder, Hemp Seeds, Desiccated Coconut and Chocolate Chips.

I like to make my own Oat Flour- its easy, it’s cheaper than buying Oat Flour and I always have Oats in my Pantry. I like to use Gluten Free Sprouted Oats. If you aren’t gluten free, then use any oats you have, but if you are gluten-free, make sure you are reading the label. Simply blend the oats into a fine flour. I like to use my Vitamix Dry Container, but you use what you have.

Next, combine all your ingredients and mix. Scoop into 2″ balls, and flatten gently.

Next Bake at 375F for 10 minutes. The cookies may not look completely done from the top, but the bottoms should be browned, Let cool before eating.

Equipment

  • 1 Baking Sheet
  • 1 Blender If blending Oats into Oat Flour

Ingredients
  

  • 2 cups Oats Flour
  • 1 cup Natural Almond Butter
  • 2/3 cup Natural Maple Syrup
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Powder
  • 2 Tbsp Hemp Seeds
  • 2 Tbsp Dessicated Unsweetened Coconut
  • 1/2 cup Dairy Free Chocolate Chips

Instructions
 

  • Preheat Oven to 375 degree F.
    If using whole oats, measure out 2 cups, and blend in Blender to make Oat Flour.
    Combine all ingredients together, adding chocolate chips last.
    Mix thoroughly.
    Measure out by the scoop and roll into balls and lay on baking sheet.
    Flatten cookies gently with hands.
    Bake in Oven at 375 for 10 minutes until cookies are lightly browned at the bottom. Let cool for at least ten minutes before eating. Cookies will harden slightly when cooled.
